As a native of Zhejiang province, I am proud to introduce the delicious cuisine of my hometown. Zhejiang cuisine is known for its fresh ingredients, light flavors, and delicate presentation. One of the most famous dishes is Dongpo pork, which is made by braising pork belly in soy sauce and wine. The meat is so tender that it falls apart with a gentle touch of chopsticks. Another popular dish is West Lake fish in vinegar sauce, which features a whole fish cooked in a sweet and sour sauce with ginger, scallions, and soy sauce. The dish is named after the picturesque West Lake in Hangzhou, the capital city of Zhejiang province.
Apart from these signature dishes, Zhejiang cuisine also boasts a variety of seafood, such as shrimp, crab, and eel. The Hangzhou-style shrimp is particularly famous for its crispy texture and fragrant aroma. The shrimp is first
coated with egg white and cornstarch, then deep-fried until golden brown. It is served with a sweet and sour sauce made of vinegar, sugar, and tomato ketchup. As for desserts, Zhejiang cuisine offers a wide range of sweet soups and pastries. One of my favorites is the glutinous rice ball in fermented rice soup, which is a warm and comforting treat on a cold winter day.
